Overnight Banana Oats for the Early Shift
2 jars, 2 servings. Tested at home, sized for two.

My wife and I are both out the door before six most days. For years breakfast was coffee and whatever was in the gas station case. This is what replaced it. Two jars, ten minutes the night before, and nothing to cook in the morning.

Bananas and oats both carry potassium. Potassium helps the body deal with sodium, which is part of why doctors push fruit and whole grains on anyone watching their blood pressure. A jar of oats will not fix anything on its own. It is still a better start than a pastry, and it keeps me full until lunch.

What you need

2 jars, 2 servings
How muchWhat
1 cupold-fashioned rolled oats (not instant)
1 cupmilk, any kind
1ripe banana, plus a few slices for the top
1/2 tspground cinnamon
1 tbspchia seeds (optional)
2 tspmaple syrup or honey (optional)
2 tbspchopped walnuts

How to make it

  1. Mash the banana in a small bowl with a fork until it is mostly smooth. A few lumps are fine.
  2. Stir in the milk, cinnamon, and the maple syrup if you use it.
  3. Add the oats and the chia seeds and stir until every flake is wet.
  4. Split the mix between two jars with lids. Close them and put them in the fridge for at least 6 hours, or overnight.
  5. In the morning, give each jar a stir. Top with banana slices and walnuts. Eat it cold or take it with you.

Cook’s notes

  • Use rolled oats. Instant oats go to paste overnight, and steel-cut oats stay too hard without cooking.
  • If it is too thick in the morning, add a splash of milk and stir. The chia seeds make it thicker, so leave them out if you like it loose.
  • The jars keep for 3 days in the fridge. Add the banana slices and nuts the day you eat them so they do not go brown and soft.
  • What the research says: potassium helps the body balance sodium, and diets rich in fruit, vegetables and whole grains are tied to healthier blood pressure. If you are on a blood pressure medicine, mention your potassium intake at your next checkup.

FAQ

Can I warm it up?

Yes. Take the lid off and microwave the jar for about a minute, stirring halfway. Add a little milk if it gets thick.

Can I make a whole week at once?

Three days is the limit for me. After that the oats get soft and sour. I make a batch Sunday night and another Wednesday.

What if my banana is still green?

It will taste starchy and not sweet. Use the ripest one you have, with brown spots if possible, or add a little more maple syrup.
